Russian honey sponges
For a cake with honey sponges, in a Russian style (as is now the fashion), which I wanted to test, I needed a recipe for tender sponges with honey, as simple and good as possible (as everyone is looking for). So I stopped at the recipe of honey sponges by Olga Ursu, a well-known cake maker on the local internet, the recipe of which I show you below, in video format :)
I added the option with cocoa (which I didn't find with her, although I know she does them.. maybe I didn't search enough), I hope she doesn't get upset!
For a portion - about 15 sheets of 18 cm diameter:
3 bc Egg
1 Pinch Salt
250 g Sugar
60 g Honey
60g Butter
Put the ingredients on the fire in a pot, until they are homogenized and the sugar is completely melted. They must not be heated excessively!
12 g Baking Soda
When the mixture is warm, add the baking soda and mix.
500 g Flour/ 425 g Flour+ 75 g Cocoa
Add flour (or flour mixed with cocoa, depending on the type of sponge) and mix well, until homogenized
Put the soft dough in cling film and refrigerate for a few hours, until it hardens.
Roll out thin sheets (for 18 cm sheets use about 100g of dough/sheet) that are pierced with a fork before baking them for about 5 minutes at 165C with ventilation.
ATTENTION, the sheets must be just slightly brown, soft and elastic when they are ready, they must NOT harden.
