Chocolate Cheesecake - No Bake
Chocolate lovers will hardly find anything better than this cheesecake with a lot of chocolate cips in a rich layer of cheese and a second super chocolaty layer with cheese and chocolate ganache !
If you only read the description above will you realize that this is about obscene amounts of chocolate!
For a 24 cm pan:
200 g Cocoa Crackers
100 g Melted Butter
The crushed biscuits are mixed with the melted butter and placed on the bottom of a 24cm tray. Press them with the bottom of a kettle and put them in the fridge until you prepare the filling.
550 g Cream Cheese
250 g Mascarpone
150 g Powder Sugar
2 pc Vanilla
Mix all ingredients in a medium bowl, using a whisk or hand mixer.
15 g Gelatin
75 g Cold Water
Hydrate the gelatin in water for 5 minutes and then melt it on a steam bath and add it over the cheese mixture, stirring vigorously.
200 g Cream
Whip the cream with a mixer and integrate it into the cheese mixture.
Remove a quarter (300g) from the resulting composition and set aside (in the bowl in which you beat the whipped cream, for example).
100 g Chocolate cips
Add over the remaining composition and then place over the biscuit layer.
200 g Cream
20 g Cocoa
150 g Dark Chocolate
Melt on a steam bath until a ganache is formed. Mix the ganache with the cheese that we put to the side (it is good to pass the ganache trough a sieve to get rid of any pieces of cocoa that have not dissolved). Pour the composition into the pan over the first layer of cheese and leave everything to cool overnight.
