Transparent Mirror Glaze

A simple and quick recipe for a transparent mirror glaze. I added lime zest to give it a stronger visual impact.

  • 90 g Water

  • 180 g Sugar

  • 270 g Glucose

Put the ingredients in a pot and bring them to 105 C.

  • 25 g Lemon Juice

  • 14 g Gelatin Sheets

Remove the pot from the heat and add the lemon juice and the gelatin, previously hydrated in cold water and drained. Stir gently to avoid introducing air bubbles into the glaze. Optionally, you can add grated lime zest.

Use the glaze at 30°C to coat entremet cakes or at a slightly higher temperature to add shine to fruits on cakes, pastries, or tarts.
