Pavlova Roll

On Valentine's Day or… any other day, the Pavlova roll is much easier to make than the Pavlova cake but just as delicious!

Pavlova Roll Recipe (For a larger roll or two smaller ones, approx. 1.3 kg total)

For the Meringue:

  • 125 g Egg Whites

  • 250 g Sugar

  • 5 g Lemon Juice

    Place the ingredients in a bowl over a double boiler until the sugar dissolves. Whip with a stand mixer on medium speed.

  • 8 g Cornstarch

    Add the cornstarch and continue mixing until the meringue reaches the "soft peaks" stage. Spread it onto a 30x40 cm baking tray and bake at 175°C for 15 minutes.

    Immediately after removing it from the oven, flip the meringue onto another tray and peel off the baking paper from the base.

For the Cream Filling:

  • 200 g Whipping Cream

  • 250 g Mascarpone

  • 30 g Powdered Sugar

  • 1 tsp Vanilla Extract

    Place all ingredients in a bowl and mix until you get a soft, spreadable cream.

  • 250 g Fresh Fruits

    Spread fresh fruits (sliced if necessary) over the cream and roll the meringue from the shorter side. You will get a 40 cm long roll, which you can cut in half for easier handling.

For Decoration:

You can make another half portion of the cream to pipe decorative swirls on top of the roll and use fresh fruits for a beautiful finish.
